Warm Lentil Salad Recipe
- 1 cup of lentils (if possible "lentilles du Puy" French green lentils)
- 1 bay leaf
- 4 cups of water
DRESSING:
- 1 tsp or more of "Moutarde de Dijon" (hot mustard), cider vinegar, red-wine vinegar - half/half
- Vegetable oil (walnut oil if you have)
- 1 large onion (or 2 smaller), finely chopped
- 1 bunch of fresh parsley and fresh chives, chopped
- 1 pinch of fresh or dried savory
- 2 garlic cloves, finely chopped
- Salt and pepper
In a saucepan combine the lentils, the water and the bay leaf. Bring the water to a boil and simmer until the lentils are just tender. Drain the lentils in a sieve, remove the bay leaf.
During the cooking time of the lentils, mix mustard, vinegars, oil, salt and pepper in a large bowl, add onion, garlic and herbs. Add the lentils. Serve warm.
